Pasta with mackerel

Products:

2 cans Compass Mackerel fillet in sunflower oil
250 g of pasta
1 onion, finely chopped
1 tbsp. olive oil
2 tbsp. basil pesto
1 tbsp. finely chopped parsley
200 ml. cream
A handful of cherry tomatoes, which are cut in halves
200 g of yellow cheese, which is cut into thin slices
Salt and pepper

Method of preparation:

1. Preheat the oven to 180°C using a top grill;
2. Boil the pasta according to the instructions on the package;
3. Drain the fish and then chop it into pieces and set it aside;
4. In a large skillet, fry the onions in a little olive oil. Reduce heat to medium and add the cream. Cook for a few minutes until it starts to thicken. Add the pasta and parsley and stir. Add 3-4 tbsp. of the water in which you cook the pasta to dilute the sauce;
5. Pour the cooked pasta into the sauce, stir and add the fish and cherry tomatoes;
6. Pour everything into a baking tray;
7. Arrange the pieces of yellow cheese on the entire surface of the pasta;
8. Bake until the cheese is melted and baked;

Serve warm!
