Small tuna croquettes

18 July 2016

Ingredients for 20 croquettes:

2 tins of Compass tuna fillet
240 g canned chick-peas
1 onion
2 garlic clove
2 tbsp olive oil
3 tbsp bread-crumbs
1 tsp baking soda
Half a bunch of parsley
Cummin to taste
Ground coriander to taste
Salt and pepper
Chili powder to taste
The juice and peel of ½ lemon
Sesame
Olive oil

Method of preparation:

1. Drain the fish and the chick-peas, finely chop the onion, garlic and parsley. Put the mixture in the blender together with the rest of the ingredients, without the sesame. Blend finely and add cummin, coriander, chili, salt, pepper, the juice and peel of ½ lemon to taste. Add the baking soda and mix well. Add some bread-crumbs if the dough is too soft.
2. From the dough, form small croquettes, roll them in the sesame and arrange them on a baking tin covered with baking paper. Sprinkle some olive oil on top and bake for about 15 minutes or until they acquire a golden-brown colour in an oven that has been pre-heated to 200°С.

**If you do not have a blender/kitchen robot, use a manual puree-maker or mash the chick-peas with a fork, and chop the other ingredients finely.
